🧅 Classic French Onion Soup

A rich, savory soup made by slow-caramelizing onions, finished with toasted bread and melty cheese. Deeply comforting and full of soul.

Ingredients:

4 large yellow onions, thinly sliced

3 tbsp butter

1 tbsp olive oil

5 cups beef or vegetable broth

Salt & black pepper to taste

1 bay leaf, 1 sprig thyme (optional)

Baguette slices, toasted

Gruyère or mozzarella cheese, grated

Instructions:

  1. Caramelize Onions:
    Melt butter and olive oil in a large pot. Add onions and a pinch of salt. Cook on medium-low heat, stirring often, for 30–40 minutes until golden and jammy. Add sugar halfway if needed.
  2. Thicken Slightly:
    Sprinkle in flour. Stir and cook 1–2 minutes to remove raw taste.
  3. Add Broth & Simmer:
    Pour in broth. Add bay leaf and thyme if using. Simmer uncovered for 20 minutes. Season to taste.
  4. Prepare Bread & Cheese:
    Toast baguette slices.
  5. Broil:
    Broil briefly until cheese is bubbling and golden.

Serve Hot:
Enjoy with extra black pepper or fresh thyme!
