Ingredients:
- 150g dark chocolate (good quality)
- 3 eggs, separated
- 3 tbsp sugar
- 1 pinch salt
- 1 tsp vanilla extract (optional)
- ½ cup heavy cream (optional, for extra richness)
Instructions:
1. Melt Chocolate:
Gently melt chocolate over a double boiler or microwave. Let cool slightly.
2. Beat Yolks:
Whisk egg yolks with half the sugar until creamy.
3. Beat Whites:
In a clean bowl, beat egg whites with a pinch of salt until soft peaks form. Gradually add remaining sugar; beat until stiff and glossy.
4. Fold Gently:
Mix melted chocolate into the yolk mixture. Gently fold in beaten egg whites (and whipped cream if using) — don’t overmix!
5. Chill:
Spoon into serving cups. Refrigerate at least 2–3 hours.
Serve Cold:
Optional: Top with shaved chocolate, berries, or a dollop of whipped cream.
