Classic Turkish Semolina Halva (İrmik Helvası)

“Semolina halva is a traditional Turkish dessert made with toasted semolina, butter, sugar, and milk. Rich, comforting, and soul-warming!”

Why It’s Special:

  • Only a few basic ingredients
  • Deep toasty, nutty flavor
  • Comfort food classic for every season

Ingredients:

  • 1 cup semolina (irmik)
  • 100g butter (about ½ cup)
  • 1 cup sugar
  • 1.5 cups milk (or water for lighter version)
  • Optional: 2 tbsp pine nuts or walnuts
  • Garnish: cinnamon, ice cream, or extra nuts

Instructions:

  1. Melt Butter & Toast Semolina:
    • In a large pan, melt butter. Add semolina (and nuts if using). Stir constantly on medium heat until golden brown and fragrant — about 10–15 minutes.
  2. Prepare Syrup:
    • In a separate pot, warm milk and sugar until sugar dissolves. Do not boil.
  3. Combine:
    • Slowly add syrup to the toasted semolina (be careful — it bubbles!). Stir constantly until absorbed.
  4. Rest:
    • Cover with a lid and let rest for 10–15 minutes off heat.
  5. Serve Warm:
    • Scoop into bowls. Optional: sprinkle cinnamon or serve with a scoop of vanilla ice cream.

Tips for Perfect Halva:

✅ Stir constantly while toasting to avoid burning.
✅ Add syrup slowly and carefully — it splashes!
✅ Resting is key for fluffy texture.
