🥕 Moist Carrot Cake with Cinnamon

Ingredients:

  • 3 large eggs
  • 1 cup sugar
  • ¾ cup vegetable oil
  • 2 cups grated carrot (about 3 medium carrots)
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: 1 tsp grated orange zest 🍊
  • Optional: ½ cup chopped walnuts or raisins

Instructions:

  1. Preheat Oven:
    • 175°C (350°F). Grease a loaf or cake pan.
  2. Whisk Eggs & Sugar:
    • Beat until light and fluffy. Add oil and vanilla, mix well.
  3. Add Carrots & Dry Ingredients:
    • Fold in grated carrots and orange zest (if using).
    • Sift flour, baking powder, baking soda, cinnamon, and salt. Gently combine.
  4. Add Nuts/Raisins (Optional):
    • Stir in at this stage if using.
  5. Bake:
    • Pour into prepared pan, bake for 40–45 minutes until toothpick comes out clean.
  6. Cool & Serve:
    • Let cool before slicing. Pairs beautifully with tea!

Tips for Best Results:

Grate carrots finely so they melt into the batter.
Orange zest is optional but adds a fresh twist.
Let it rest a day — tastes even better next day!
