🥗 Traditional Turkish Bulgur Salad (Kısır)

Ingredients:

  • 1.5 cups fine bulgur

  • Juice of 1 large lemon
  • 4 spring onions, finely chopped
  • 1 bunch parsley, finely chopped
  • 1 bunch fresh mint (or 1 tbsp dried mint)
  • 1 small cucumber, diced
  • 1 ripe tomato, diced (optional)
  • Salt, black pepper, and red pepper flakes to taste

Instructions:

  1. Soften the Bulgur:
    • Place the bulgur in a large bowl. Add hot water, cover, and let it rest for 15–20 minutes until fully softened.
  2. Prepare Flavor Base:
    • In a separate bowl or pan, mix the tomato paste, pepper paste, olive oil, and lemon juice until smooth.
  3. Combine:
    • Fluff the bulgur with a fork. Add the flavor base and mix gently but thoroughly.
  4. Add Fresh Ingredients:
    • Stir in chopped green onions, parsley, mint, cucumber, and tomato if using. Season with salt, black pepper, and red pepper flakes.
  5. Serve:
    • Enjoy at room temperature or chilled, optionally with crisp lettuce leaves.

Tips for a Perfect Kısır:

Use Fine Bulgur (#1): Soaks up flavor easily.
Let It Rest: Flavors develop better if it sits a bit.
No Need for Extras: Simplicity is key in this classic version.
