🌶️ Ezogelin Soup (Ezogelin Ă‡orbası)

Ingredients:

  • 1 cup red lentils, rinsed
  • 2 tablespoons fine bulgur
  • 2 tablespoons rice (optional)

  • 2 tablespoons olive oil or butter
  • 6 cups (1.5L) hot water or vegetable broth

Instructions:

  1. Sauté Aromatics:
    • Heat oil in a pot. SautĂ© the onions until soft. Stir in tomato and pepper pastes. Cook for 2–3 minutes.
  2. Add Grains & Liquid:
    • Add lentils, bulgur, and rice. Pour in hot water/broth. Stir and bring to a boil.
  3. Simmer:
    • Reduce heat and let it cook for 25–30 minutes, stirring occasionally until everything is soft.
  4. Season & Blend (Optional):
    • Add salt, pepper, mint, paprika, cumin. Use a blender for a smoother texture or leave chunky.
  5. Serve:
    • Hot, with a squeeze of lemon juice on top.
