Turkish Yogurt & Garlic Meze (Haydari)

“Haydari is a classic Turkish meze made with thick yogurt, garlic, and herbs. It’s creamy, refreshing, and packed with flavor. Perfect as a dip, appetizer, or side dish, especially with warm pita bread or grilled meats!”

Health Benefits of Haydari:

  • Rich in Probiotics: Supports digestion and gut health.
  • High in Protein & Calcium: Strengthens bones and muscles.
  • Antioxidant Boost: Garlic and olive oil support the immune system.

Ingredients:

  • 1 ½ cups (375g) thick strained yogurt (preferably Greek yogurt or süzme yoğurt)
  • 1 tablespoon butter
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried mint
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon black pepper (optional)
  • ½ teaspoon red pepper flakes (pul biber, optional)
  • 1 teaspoon crumbled feta cheese (optional, for extra creaminess)

Instructions:

  1. Prepare the Yogurt Base:
    • In a bowl, mix the strained yogurt with salt, black pepper, and crumbled feta (if using).
  2. Sauté the Garlic:
    • Melt the butter in a small pan over low heat.
    • Add minced garlic and sauté for 30 seconds until fragrant (don’t let it burn!).
    • Stir in dried mint and red pepper flakes, then remove from heat.
  3. Combine & Mix:
    • Pour the garlic-butter mixture into the yogurt and stir well until smooth.
    • Drizzle with olive oil on top for extra richness.
  4. Chill & Serve:
    • Let it sit in the fridge for at least 15 minutes to let the flavors blend.
    • Serve cold with pita bread, grilled meat, or fresh veggies.

Tips for the Best Haydari:

Use Full-Fat, Thick Yogurt: For the best creamy texture.
Don’t Overcook Garlic: Burnt garlic makes the taste bitter.
Let It Rest: Chilling enhances the flavors.
Customize: Add walnuts or dill for a different twist!
